Philly Cheese Steak Sloppy Joes


I love philly cheesesteaks.  I haven't found a recipe to make at home that is any good.  I found this on pinterest and thought I would give it a try.  It was a huge hit.  The juice tasted just like a cheesesteak.  I think one day I may have the butcher at giant eagle shave some steak and try to make it with that instead.

REcipe:

Philly Cheesesteak Sloppy Joes


1 tablespoon olive oil
1 softball-sized onion, chopped
1 green pepper, chopped (optional)
1 pound ground beef
2 tablespoons steak sauce, such as A-1
1/2 cup beef stock
Salt and ground black pepper
4 dinner rolls
Cheese sauce (see below) or sliced provolone or Cheez Wiz
Optional toppings: shredded Romaine, sliced tomato, sliced raw white onion, 4 tablespoons mayo mixed with a splash of red wine vinegar and a shake of oregano

Cheese sauce:
1 tablespoon butter
1 tablespoon flour
1 cup milk
1 cup provolone, shredded

In large skillet over medium-high heat add the oil. Add the onion and green pepper and cook until soft and starting to brown. Add the ground beef and cook about 5-6 minutes. Drain off the fat, then stir in the steak sauce and beef stock, season with salt and pepper, bring to a boil and cook about 2 minutes.

Toast the rolls and set aside.

If making the cheese sauce, melt the butter in a medium-size pot over medium-high heat. Stir in the flour and cook about 1 minute. Whisk in milk, bring up to a bubble and let thicken, about 2 minutes. Turn off heat and stir in the cheese.

Korean beef


This is a "cheater" version but very tasty.   The sauce tastes like it is from PF Changs Mongolian beef. But cooking with flank steak never works out for me. So when I saw this recipe using ground beef I thought I would give it a try. We served it with quinoa (we use it instead of rice) and broccoli. It didn't look pretty but it tasted yummy.

Ingredients
  • 1 pound lean ground beef
  • 1/4 cup brown sugar (add more if you like it sweeter)
  • 1/4 cup soy sauce
  • 1 Tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon fresh ginger, minced (see note)
  • 1/2 - 1 teaspoon crushed red pepper (depending on how spicy you like it)
  • salt and pepper
  • 1 bunch green onions, sliced

Instructions
  1. Heat a large skillet over medium heat. Brown the ground beef in the sesame oil. Add the garlic towards the end of browning and cook for a couple of minutes. Drain the fat.
  2. Add the brown sugar, soy sauce, ginger, salt and pepper and red pepper. Simmer for a few minutes to blend the flavors. Serve over steamed rice and top with green onions.

Empanadas



I haven't posted much lately b/c frankly a lot of the new recipes I recently made have not been winners. It is so depressing when you try something new and no one really likes it. Especially with the cost of groceries right now I can't afford too many duds.

Everyone in the family ate these (baby too). I think that these would freeze well so next time I will double the recipe and freeze some for later.

I made these empanadas with some left over ground beef. I mixed in some chili powder, cumin, and and onion powder. Then some cheddar cheese. It would be good with a little more spice next time.

Here is the basic recipe:

For the dough:
1 1/2 cups all purpose flour
1 cup masa harina
1 tsp baking powder
1 tsp salt
1/2 cup butter, melted and cooled
3/4 cup water (plus or minus 1 tbsp)

Mix together dry ingredients. Using a fork, mix in the butter and distributed within the flour. Slowly add water, carefully mixing with the fork until it begins to pull together. Form into a ball and wrap with saran. Pop in the fridge and hold for 30 minutes.

Divide the dough into approx. 1 ounce balls (think ping pong ball size). Use a rolling pin to roll the dough out into a circle. Spoon filling into the middle. Seal the empanadas closed.

Once your empanadas are made, cover and pop in the fridge for 30 minutes.

Per the blog I got the recipe from you can either fry or bake them. She recommended frying them so that is what I did. For about 5 minutes.

Serve with salsa, sour cream and gaucamole.

Sloppy Joes


Mike does not like sloppy joes too much. I had a ton of beef and didn't want tacos or hamburgers so I thought I would try this recipe out. I read about it on a message board. Verdict Mike liked them so they must be good. Maybe next time I will try them with ground turkey.

Rachel Ray Sloppy Joes
Ingredients

* 1 tablespoon extra-virgin olive oil, 1 turn of the pan
* 1 1/4 pounds ground beef sirloin
* 1/4 cup brown sugar
* 2 teaspoons to 1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning
* 1 medium onion, chopped
* 1 small red bell pepper, chopped
* 1 tablespoon red wine vinegar
* 1 tablespoon Worcestershire sauce
* 2 cups tomato sauce
* 2 tablespoons tomato paste
* 4 crusty rolls, split, toasted, and lightly buttered
* Garnish: sliced ripe tomatoes, pickles, Deviled Potato Salad, recipe follows

Directions

Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes

Beefy Biscuit Cups


Here is a quick and easy recipe we use when we have left over ground beef. Hayden really enjoys these so they are kid friendly. Nothing gourmet but good for a busy night.

Ingredients

* 1 pound ground beef
* 1 jar (14 ounces) spaghetti sauce
* 2 tubes (8 ounces each) large refrigerated biscuits
* 1 cup (4 ounces) shredded cheddar cheese

Directions

* In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the spaghetti sauce; cook over medium heat for 5-10 minutes or until heated through.
* Press biscuits onto the bottom and up the sides of greased muffin cups. Spoon 2 tablespoons beef mixture into the center of each cup.
* Bake at 375° for 15-17 minutes or until golden brown. Sprinkle with cheese; bake 3 minutes longer or until cheese is melted. Yield: 8 servings.

Cheeseburger Pie


Cheeseburger Pie... an oldie but goodie.
Mom got this recipe from a bisquick book many years ago. It was an instant hit. We now all have this cookbook (bought by her). The recipes are pretty good and they are easy to make.

We had this a few nights ago. Hayden also enjoyed it. (If I let him eat it with a grown up fork, no kid fork for him.

The only change I make is that I don't mix in the cheddar cheese. I save it and put it on top and melt it towards the end of the baking time.

Recipe:
1 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick® mix
1 cup milk
2 eggs

1.Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
2.In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
3.In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
4.Bake about 25 minutes or until knife inserted in center comes out clean.
